TUNA PASTA BAKE

Ingredients :
- 1 pound of shellfish pasta
- 1 tablespoon of vegetable oil
- 1 large onion peeled and chopped
- 1 red bell pepper seeded and chopped
- 1 yellow bell pepper seeded and chopped
- 11 oz of canned tuna, drained and crumbled
- A pinch of salt and pepper
- 2 cloves of garlic, peeled and minced
- 2 tablespoons of tomato puree
- 1 teaspoon of dried oregano
- 28 oz tinned crushed tomatoes
- ½ cup double cream (thick)
- 1 cup grated cheddar cheese
- 1 cup mozzarella – grated
- 1 small bunch of parsley - roughly chopped
Recipe
Instructions :
- Preheat the oven to 190°C (375°F). Bring a large pot of water to a boil and cook the pasta for 1 minute less than recommended on the packaging. Drain.
- While the pasta is cooking, heat the oil over medium heat in a large skillet.
- Add the onion and cook for 3-4 minutes until the onion is softened.
- Add the chopped peppers, tuna, salt, pepper, garlic, tomato paste, and oregano. Stir and cook for 15 minutes.
- Now add the tinned tomatoes and cream, bring to a light boil, then add the pasta. Mix everything together, then transfer to a large baking dish.
- Top with cheddar and mozzarella and bake for 20 to 25 minutes, until the cheese is golden.
- Remove from the oven and sprinkle with a pinch of parsley before serving.
