Extra virgin olive oil: This is the purest and most prestigious olive oil. It is obtained from the first cold pressing of the olive, without the addition of chemicals and without thermal treatment. Extra virgin olive oil has a golden green color, a fruity flavor, and a low acidity that does not exceed 0.8%.

Virgin olive oil:It is also obtained from the first cold pressing of the olive, but it may have a higher acidity than extra virgin olive oil, which does not exceed 2%. Virgin olive oil has a golden yellow color and a milder flavor than extra virgin olive oil.

Lampante olive oil: This is a lower-quality olive oil with a free acidity greater than 2% and can only be consumed after undergoing a refining process.

Olive Pomace Oil:This oil is obtained from a blend of refined olive pomace oil and extra virgin olive oil, with an acidity level no higher than 1.5%.

Each of these types of olive oils has its own characteristics and can be used for different culinary applications.
