Olive culture in Tunisia

The cultivation of the olive tree is an age-old practice that dates back to antiquity. The olive tree was already cultivated in Mesopotamia more than 6,000 years ago, to be introduced later in the Mediterranean basin. Since then, the olive tree has become one of the essential elements of the culture and history of Tunisia. This tradition passed down from father to son goes back to several civilizations including the Phoenicians, Carthaginians, Greeks, Romans and Arabs, who all left their mark by taking great care to protect and improve the cultivation of the olive tree as well as to extract a nutritional quality oil that improves over time.

Over the years, Tunisia has become one of the largest producers and exporters of olive oil in the world. Thus, the olive tree is now deeply rooted in the Tunisian culture, economy and landscape, representing both a historical heritage and vital resource for the country.

Over the past few decades, olive cultivation has undergone significant evolutions by continuing to develop sustainable and resilient agricultural practices, which will help sustain olive cultivation for generations to come.

From generation to generation

In the 7th century, the Andalusian Muslims (Moriscos) settled in Tunisia, taking advantage of the opportunities of the time to acquire farms and cultivate olive trees, among them the Ali Sfar farms which succeeded for a long time the property of the Andalusians before being bought by the Sfar family. Since then, the culture of the olive tree has been transmitted from generation to generation, as ancestral know-how and family heritage. Thus, our ancestors cultivated olive trees for centuries, passing on their knowledge and cultivation techniques from father to son. This intergenerational transmission has preserved traditional olive cultivation practices, including pruning methods, selection of olive varieties suited to local conditions, observation of signs of olive ripeness, and even celebrations and rituals related to the olive harvest.

Indeed, our grandfather Hassine Sfar was able to pass on his wisdom and know-how to our father Ali Sfar, to whom we wanted to pay tribute by lending his name to our company. Growing up among olive groves and working alongside experienced farmers, our father developed a deep connection to olive growing and was introduced to its secrets and intricacies. Following his death in 1984, our mother Khadouja Sfar took over and continued to follow in his footsteps by caring for the olive trees and ensuring their health, nutrition and protection to promote optimal growth and abundant olive production. In 2010, she passed on the torch to us, her four children Amina, Donia, Myriam and Mohamed Hassine who represent today’s generation, to continue to honor tradition while embracing modern innovations to produce olives and olive oils of exceptional quality.

In sum, this knowledge transmitted from generation to generation has contributed not only to the preservation of the culture of the olive tree, but has also been supplemented by multiple innovations, such as modern agricultural techniques and technologies to improve productivity and the quality of our olive oil.

Founded in 1970 and has passed down through three generations, Fermes Ali Sfar ("FAS") is a family business specialized in the production and marketing of organic farming products, particularly olive oil production, cattle, sheep, poultry farming and various crop productions, and this according to the organic standards set forth by the certifying bodies. FAS has three certified organic farms that extend more than 1200 acres holding 25000 olive trees. The first farm named “Chwariya” is located in Boumerdes, a village by the Tunisian coast, 32 kilometers west of Mahdia city. The second farm is called “Beni Darraj” based in Zriba village at the foot of Jebel Zaghouan. As for the third and largest farm, it is located in the valley of "Oued el Kenz" 20 km from Zaghouan, an ancient Roman city in the northeast of Tunisia known for its sources with pure and coveted waters, once a source water supply for Carthage and the irrigation of agricultural land through the aqueducts, the spectacular remains of which can still be admired. "Oued el Kenz", the main farm, is equipped with an authentic mill that continues to press olives the traditional way using granite millstone and mat pressing, ensuring respect and control of production according to organic standards. This demonstrates our commitment to sustainable farming practices and our focus on producing healthy high-quality product.

It is important to note that nowadays there are modern manufacturing methods that use more advanced technologies to extract olive oil. However, the traditional olive oil making process remains the most valued method for the quality and flavor of the olive oil produced.

The different types of olive oil

Fermes Ali Sfar produces several types of olive oil from olives grown according to organic farming standards.


Extra Virgin Olive Oil

The purest and most prestigious olive oil. It is first cold pressed without any chemicals or heat treatment. Extra virgin olive oil has a golden green color, a fruity flavor and a low acidity level that does not exceed 0.8%.

Virgin Olive Oil

It is also first cold pressed, however its acidity level is higher than extra virgin olive oil and does not exceed 2%. Virgin olive oil has a golden yellow color and a milder flavor than extra virgin olive oil.

Lampante Olive Oil

It is a low-quality olive oil with a free acidity level above 2% and has to go through a refinement process to be fit for human consumption.

Olive Pomace Oil

This oil is obtained from a blend of refined olive pomace oil and extra virgin olive oil, with an acidity level no higher than 1.5%.

Each of these types of olive oil has its own characteristics and can be used for different culinary applications.
