OLIVE CULTURE IN TUNISIA

The cultivation of the olive tree is an ancient practice dating back to antiquity. Olive trees were already being cultivated in Mesopotamia over 6,000 years ago, before being introduced to the Mediterranean basin. Since then, the olive tree has become one of the essential elements of Tunisian culture and history.

This tradition passed down from father to son goes back to several civilizations including the Phoenicians, Carthaginians, Greeks, Romans and Arabs, who all left their mark by taking great care to protect and improve the cultivation of the olive tree as well as to extract a nutritional quality oil that improves over time.

From generation to generation

In the 7th century, Andalusian Muslims (Moriscos) settled in Tunisia, taking advantage of the opportunities of the time to acquire farms and cultivate olive trees. Among them were the Ali Sfar farms, which were owned by the Andalusians for a long time before being purchased by the Sfar family.

Founded in 1970 and has passed down through three generations, Fermes Ali Sfar ("FAS") is a family business specialized in the production and marketing of organic farming products, particularly olive oil production, cattle, sheep, poultry farming and various crop productions, and this according to the organic standards set forth by the certifying bodies.
